Welcome to the community! In my opinion, it is critical that you first try to understand the basic concepts and methods of Project Management. You could start by getting ahold of the PMBOK (available from PMI) and start to understand the basic to medium concept of Projects. It would also be beneficial if you could enroll yourself into a PM education provider. Further, learning the ropes takes considerable time and experience so get strapped in for the ride. In terms of a Project Plan, the easiest and most conveniant would be to use MS Project but please don't expect or consider that Project Management as that is only one facet.

Do you have any PMO (Project Management Office) or a group which is responsible for creating all relevent templates and guidelines in your organization? If yes, that can be a very good starting point for you.

If it is not there, then you can start slow and steady by understanding processes and their usage in your scenario. It is most likely that you might be doing a lot of the processes already in your organization however try and understand the importance and mapping.

As far as templates are concerned, I may not be of any great use since I will not be able to share my organization's templates outside.

Hope this can help you to start in PM world. All the best !!!
